这两句用同位语然后再上加定语从句,而没直接在表达的内容后加定语从句,是为了强调突出前面指代的内容,即同位语的具体内容。
句2中 is characteristic of 是“具备。。。特点”的意思。

除此之外,句1中and后的was一般前面出现了,第二个就会省略。这里没省略是为了强调exploring这个活动项目吗?

1 two activities that...是对前面二个谓语动词的补充说明,但不可以说名词是动词结构的同位语。假如大家在two activities前加上which were就成了传统语法的非限制性定语从句,which的先行词为主句的二个谓语部分。现代语法称之为关系分句作补充语(补充性状语),是说话人对主句或主句一部分所作的补充说明。这个句子中没which were,则只能觉得是名词词组作补充语(supplementation),对谓语作补充说明。不适合剖析为同位语。同位语指的是互为同位关系的两个名词或名词性词组词。
2 one是同位语,one替代an attitude, 讲解前面的以attitude为中心词的名词词组。即one与attitude互为同位语。
3 and was exploring不省略was, 其目的是强调孩子学习的时候既是快乐的,又是在探索这个世界。
